- 1 cup mushrooms, sliced (optional)
- 1 can (400ml) coconut milk
- 1-2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp fish sauce (optional, for authentic flavour)
- 1-2 tbsp lime juice (to taste)
- 1-2 tbsp brown sugar or palm sugar (to taste)
- 2-3 tbsp of F N Good Food Thai Lemon seasoning (adjust to taste)
- Fresh cilantro, Thai basil, or green onions for garnish
- Crushed peanuts or sesame seeds for topping (optional)
- Lime wedges for serving
Instructions
1. Prepare the Noodles:
Cook the rice noodles according to package instructions. Drain and set aside.
2. Sauté the Aromatics:
Heat the oil in a large skillet or wok over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
3. Add Vegetables:
Toss in the bell pepper, carrot, snap peas, and mushrooms (if using). Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
4. Incorporate the F N Good Food Thai Lemon seasoning:
Sprinkle 2-3 tbsp over the vegetables and stir to coat evenly. Cook for 1-2 minutes to release the aromas.
5. Create the Sauce:
Pour in the coconut milk, soy sauce, fish sauce (if using), lime juice, and sugar. Stir well to combine. Let the sauce simmer for 5-7 minutes, allowing the flavours to meld. Taste and adjust seasoning if needed.
6. Combine Noodles and Sauce:
Add the cooked noodles to the skillet and toss to coat them in the sauce. Cook for another 2-3 minutes until everything is heated through.
7. Garnish and Serve:
Divide the noodles into bowls. Top with fresh cilantro, Thai basil, or green onions. Sprinkle with crushed peanuts or sesame seeds, if desired. Serve with lime wedges on the side.
Tips
- For protein, add tofu, shrimp, or shredded chicken.
- If you prefer a spicier dish, add a chopped Thai chili or a dash of chili flakes.
- Adjust the amount of F N Good Food Thai Lemon seasoning to suit your taste-start with 2 tbsp and add more if needed.
-cook the ingredients based on how quickly your stove is. Every stove type is different. Take off the heat if it starts to look too soft. The secret to a good stir fry dish is to have some crunchiness.
