Spiced BBQ Meatloaf with Sweet and Smoky Glaze

Ingredients
For the Meatloaf:
- 1.5 lbs (680g) ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs (or almond flour for gluten-free)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- 1/4 cup milk (or unsweetened almond milk)
- 2-3 tbsp of F N Good Food Jamaican Jerk seasoning (adjust to taste)
- 1 tsp Worcestershire sauce (optional but recommended for umami)
- Salt and pepper to taste
For the Glaze:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp of F N Good Food Jerk Chicken seasoning
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, parsley, egg, milk, F N Good Food Jerk Chicken seasoning, Worcestershire sauce (if using), salt, and pepper. Mix gently with your hands or a spoon until just combined—avoid overmixing.
3. Shape the Meatloaf:
Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf shape, about 9x5 inches (23x13 cm).
4. Make the Glaze:
In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, smoked paprika, and optional 1/2 tsp of F N Good Food Jerk Chicken seasoning.
5. Glaze and Bake:
Spread half of the glaze evenly over the top of the meatloaf. Bake in the preheated oven for 40 minutes. Remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
6. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes it easier to slice.
