Za’atar-Spiced Flatbread with Whipped Feta and Roasted Vegetables

Ingredients

For the Flatbread:

- 2 store-bought or homemade flatbreads (or naan)
- 3 tbsp olive oil

For the Whipped Feta:

- 1 cup feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/4 tsp black pepper

For the Roasted Vegetables:

- 1 cup cherry tomatoes, halved
- 1 red bell pepper, sliced
- 1 zucchini, sliced into half-moons
- 1 small red onion, sliced
- 2 tbsp olive oil
- 1 tbsp of F N Good Food Za’atar seasoning
- Salt and pepper to taste

For Garnish:

- Fresh parsley or mint, chopped
- Extra drizzle of olive oil (optional)

Instructions

1. Preheat your oven to 425°F (220°C).

2. Roast the Vegetables:
On a large baking sheet, toss the cherry tomatoes, red bell pepper, zucchini, and red onion with olive oil, F N Good Food Za’atar seasoning, salt, and pepper. Spread in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized. Set aside.

3. Prepare the Flatbread:
Brush the flatbreads with olive oil and sprinkle generously with F N Good Food Za’atar seasoning. Place them on a baking sheet and bake in the preheated oven for 5-7 minutes, or until crispy and golden. Alternatively, you can grill the flatbreads for a smoky flavour.

4. Make the Whipped Feta:
In a food processor or blender, combine the feta, Greek yogurt, lemon juice, olive oil, garlic, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.

5. Assemble the Flatbreads:
Spread a generous layer of whipped feta over each flatbread. Top with the roasted vegetables, arranging them evenly.

6. Garnish and Serve:
Sprinkle with fresh parsley or mint and drizzle with a little extra olive oil if desired. Slice and serve immediately.

Tips
- For a vegan version, substitute the feta with a plant-based cheese and use dairy-free yogurt.
- Add a sprinkle of chili flakes or extra F N Good Food Za’atar seasoning for a spicier kick.
- Serve with a side of mixed greens or a simple cucumber salad for a complete meal.
