Ingredients
For the Chicken and Potatoes:
- 4 bone-in, skin-on chicken thighs (or drumsticks)
- 2 lbs (900g) baby potatoes, halved
- 3 tbsp olive oil
- 3 tsp of your F N Good Food Za’atar seasoning (adjust to taste)
- 1 lemon, thinly sliced
- 4 cloves garlic, minced
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
For the Garlic Yogurt Sauce:
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Chicken and Potatoes:
In a large bowl, toss the chicken thighs and halved baby potatoes with olive oil, F N Good Food Za’atar seasoning, minced garlic, salt, and black pepper. Mix well to coat evenly.
3. Arrange on a Baking Sheet:
Spread the potatoes in a single layer on a large baking sheet. Place the chicken thighs on top of the potatoes, skin-side up. Scatter the lemon slices around the chicken and potatoes.
4. Roast:
Place the baking sheet in the preheated oven and roast for 35-40 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the potatoes are tender and crispy. If the chicken skin isn’t crispy enough, broil for 2-3 minutes at the end (watch closely to avoid burning).
5. Make the Garlic Yogurt Sauce:
While the chicken and potatoes roast, prepare the sauce. In a small bowl, mix the Greek yogurt, minced garlic, lemon juice, olive oil, dill, salt, and pepper. Stir well to combine. Taste and adjust seasoning if needed.
6. Garnish and Serve:
Remove the chicken and potatoes from the oven. Garnish with fresh parsley and serve hot with the garlic yogurt sauce on the side.
