Spiced Sweet Potato and Black Bean Chilli

Ingredients
For the Chili:
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced (optional, for heat)
- 2-3 tsp of F N Good Moroccan Tagine seasoning (adjust to taste)
- 1 can (14 oz/400g) diced tomatoes
- 1 can (14 oz/400g) tomato sauce
- 2 cans (14 oz/400g each) black beans, drained and rinsed
- 1 cup vegetable stock (or water)
- 1 cup frozen corn kernels
- 1 tbsp soy sauce or tamari (for depth of flavour)
- 1 tbsp maple syrup or brown sugar (optional, for balance)
- Salt and pepper to taste
For Toppings:
- Sour cream or Greek yogurt
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Sliced green onions
- Lime wedges
Instructions
1. Sauté the Aromatics:
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened.
2. Add Vegetables and Spices:

3. Build the Chilli:
Add the diced tomatoes, tomato sauce, black beans, vegetable stock, corn, soy sauce, and maple syrup (if using). Stir well to combine.

Bring the chilli to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking. If the chili is too thick, add a splash of water or stock.
5. Season and Serve:
Taste and adjust seasoning with salt and pepper. Serve hot with your favourite toppings, such as sour cream, shredded cheese, fresh cilantro, green onions, and lime wedges.
