Ingredients
For the Herb-Infused Crust:
- 1 1/4 cups all-purpose flour (or gluten-free flour blend)
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 1-2 tsp of F N Good Food Warming Winter seasoning (adjust to taste)
- 3-4 tbsp ice water
For the Filling:
- 3 large onions, thinly sliced
- 2 tbsp olive oil or butter
- 1 tbsp brown sugar
- 2-3 tsp of F N Good Food Warming Winter seasoning (adjust to taste)
- 1/2 cup crumbled goat cheese (or feta for a tangier option)
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 1/2 cup heavy cream or whole milk
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
1. Make the Crust:
In a food processor, combine the flour, salt, and seasoning mix. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, and pulse until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Tart Shell:
Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit a 9-inch tart pan with a removable bottom. Press the dough into the pan, trimming any excess. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans. Blind bake for 15 minutes. Remove the weights and parchment paper, then bake for another 5-7 minutes until lightly golden. Let cool.
3. Caramelize the Onions:
Heat the olive oil or butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until deeply golden and caramelized. Stir in the brown sugar and 2-3 tsp of F N Good Food Warming Winter seasoning. Cook for another 2-3 minutes, then remove from heat.
4. Prepare the Custard:
In a bowl, whisk together the eggs, heavy cream (or milk), salt, and pepper.
5. Assemble the Tart:
Spread the caramelized onions evenly over the pre-baked tart shell. Sprinkle the crumbled goat cheese and grated Parmesan over the onions. Pour the custard mixture over the top.
6. Bake:
Place the tart in the preheated oven and bake for 25-30 minutes, or until the custard is set and the top is lightly golden.
7. Garnish and Serve:
Let the tart cool for 10 minutes before slicing. Garnish with fresh thyme or parsley and serve warm or at room temperature.
